Recipe: High Fiber Happy Smoothie

This refreshing smoothie blends your favorite summer berries with gut-friendly kefir and high fiber Medjool dates for a nourishing, healthy treat. Blueberries and strawberries are packed with mood-boosting flavonoids – hence the name, happy smoothie.

INGREDIENTS

  • ¾ cup fresh or frozen blueberries
  • ¾ cup halved fresh or frozen strawberries
  • ½ cup whole-milk plain kefir
  • 2 pitted Medjool dates
  • 1 tablespoon smooth natural almond butter
  • ¼ teaspoon vanilla extract
  • 1 cup ice cubes

INSTRUCTIONS:

  1. Combine blueberries, strawberries, kefir, dates, almond butter and vanilla in a blender, process until smooth, about 30 seconds.

  2. Add ice and process until smooth and thickened, about 20 seconds.

Makes 1 serving.
