Raspberry Oatmeal Bars 2

Recipe: Raspberry Oatmeal Bars

Need a new idea for an on-the-go breakfast or snack? With the tart sweetness of raspberries balanced by the nutty flavor of oats, these bars are a tasty high-fiber treat.

INGREDIENTS

Crust and Topping

  • ½ cup flour
  • ¼ cup brown sugar
  • 1 cup quick-cooking oats
  • 3 tablespoons butter
  • 2 tablespoons unsweetened applesauce
  • 1 tablespoon orange juice

Filling

  • 1 tablespoon flour
  • 1 tablespoon brown sugar
  • 1 ½ teaspoons orange juice
  • 2 cups raspberries (fresh or frozen)

INSTRUCTIONS:

Preheat oven to 375 F. Lightly oil an 8x8-inch baking pan.

Crust and Topping

  1. Mix flour and sugar in a bowl. Cut butter into mixture until crumbly. Mix in oats. Set half aside for topping.

  2. To the remaining mixture, stir in applesauce and orange juice. Press into the bottom of the baking pan.

Filling

  1. Combine flour, sugar, orange juice and raspberries. Mix well.

  2. Spread filling on crust. Sprinkle with topping.

  3. Bake for 40 to 45 minutes. Let cool. Cut into 12 bars.

Store in an airtight container in the refrigerator.

Makes 12 servings.
