Recipe: Tropical Fruit Salsa

With their distinctive flavor and high water content, tropical fruits are a refreshing and healthy summer treat.

Grown in regions where the weather is hot and humid, tropical fruits need specific environmental conditions to thrive. Unlike other fruits, pollination does not occur with tropical fruits. Instead, the animals of the region actually replant the seeds.

Tropical fruits are often referred to as superfoods, since they are full of vitamins and minerals. They are rich in potassium, which helps regulate blood pressure and helps to maintain heart health. In addition, they contain protein-digesting enzymes that can reduce inflammation. Of course, tropical fruits also contain vitamin C, which helps fight infections and removes impurities from the body.

Here in the U.S., the most familiar tropical fruits are bananas, coconuts, mangoes, pineapples, avocados, kiwi and papayas. Take the opportunity this summer to snack on, cook with or sample a new tropical fruit. Here is a fun, healthy and colorful recipe you can try!

INGREDIENTS

  • 1 ½ cups mango, chopped
  • 1 cup kiwi, chopped
  • 1 cup pineapple, chopped
  • ¼ cup red onion, chopped
  • ¼ cup cilantro, chopped
  • 1 serrano chile pepper
  • 4 tablespoons lime juice
  • 1 teaspoon cumin seeds, crushed
  • ¼ teaspoon salt

INSTRUCTIONS:

  1. In a large mixing bowl, combine the chopped mango, kiwi, pineapple, red onion and cilantro.

  2. Finely chop the serrano chile, removing seeds if you prefer less heat, and add it to the bowl.

  3. Pour the lime juice over the fruit mixture.

  4. Sprinkle the crushed cumin seeds and salt over the top.

  5. Gently toss all ingredients together until well combined.

  6. Let the salsa sit for at least 15 minutes to allow the flavors to meld.

  7. Serve immediately or refrigerate until ready to use.

  8. Enjoy with chips, on tacos or as a refreshing side dish!
