Recipe of the Month: Red, White and Blue Berry Tarts

Celebrate Independence Day with this delicious and healthy patriotic dessert! With its mix of colorful berries atop a cream filling, this tasty treat is a must-have for your holiday picnic. The recipe makes four servings, but it can easily be multiplied to serve a crowd.

INGREDIENTS

  • 2 whole graham crackers (4 squares)

  • 4 ounces fat-free cream cheese, softened

  • 2 tablespoons fat-free sour cream

  • 1/2 teaspoon vanilla

  • 1 tablespoon powdered (confectioners') sugar

  • 2 cups mixed berries: raspberries, strawberries, blueberries

  • 4 paper muffin cups

INSTRUCTIONS:

  1. Finely crush graham crackers and divide crumbs among 4 muffin cups. A muffin tray will help you shape them correctly.

  2. In a small bowl, mix the cream cheese, sour cream, vanilla, and confectioners' sugar with a whisk to make no-cook pastry cream.

  3. Spoon mixture on top of graham cracker crumbs.

  4. Top with berries. You can save some berries to decorate the plate.

  5. Refrigerate for at least 2 hours before serving.

Makes 4 tarts; serving size is 1 tart
