Recipe: Summer Blueberry Salad With Toasted Pecans and Feta

This fresh blueberry salad is full of nutritional powerhouses. Blueberries, arugula and spinach are all superfoods: low in calories and high in nutrients, vitamins and fiber that can help improve your overall health. Best of all, you can have this delicious salad on the table in just five minutes.

INGREDIENTS

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon balsamic vinegar

  • 2 tablespoons extra-virgin olive oil

  • ⅛ teaspoon kosher salt

  • ⅛ teaspoon freshly ground black pepper

  • 4 cups spinach and arugula salad mix

  • 1 cup fresh blueberries (about 1/2 pint)

  • ⅓ cup chopped toasted pecans

  • ⅓ cup crumbled feta cheese

INSTRUCTIONS:

  1. In a large bowl, whisk together lemon juice, balsamic vinegar, olive oil, salt and pepper.

  2. Add spinach and arugula mix, blueberries, pecans and feta cheese, tossing gently to combine.

Makes 4 servings.
