Recipe: Slow Cooker Chickpea Sweet Potato Stew

Think cinnamon can only star in desserts? Think again! Cinnamon is a versatile spice and a great supporting actor in savory dishes, as well as sweet ones.

And when it comes to health benefits, cinnamon has a variety of antioxidant and anti-inflammatory properties. It may even lower triglyceride and cholesterol levels.

So on these chilly autumn days, branch out and try something new using this beloved spice derived from tree bark in a cozy slow cooker stew recipe.

INGREDIENTS

  • 1 medium yellow onion, chopped

  • 2 15-ounce cans of garbanzo beans, drained

  • 1 pound of sweet potatoes, peeled and chopped

  • 1 tablespoon garlic, minced

  • ½ teaspoon kosher salt

  • ¼ teaspoon coarse ground black pepper

  • 1 teaspoon ground ginger

  • 1 ½ teaspoons ground cumin

  • 1 teaspoon ground coriander

  • ¼ teaspoon ground cinnamon

  • 4 cups of fat-free vegetable broth

  • 4 cups of fresh baby spinach

INSTRUCTIONS:

  1. Place the onions in a microwave-safe dish and microwave 2 to 3 minutes.

  2. Add all the ingredients except the spinach to your slow cooker.

  3. Cook on low for 6-7 hours or on high for 3-4 hours.

  4. Add the spinach leaves and stir.

  5. Cook an additional 15 minutes on high.

Makes 6 servings.
