Recipe: Mashed Cauliflower and Yukon Golds
This Thanksgiving, lighten up your mashed potatoes with a delicious twist on a perennial favorite. The combination of cauliflower and Yukon Gold potatoes adds fiber and reduces calories, while sour cream and butter add a rich, creamy flavor. Family and friends will love this simple, easy-to-make dish!
INGREDIENTS

1 pound Yukon Gold potatoes, peeled and cut into 1-inch pieces

1 pound cauliflower florets (1 head)

3 tablespoons sour cream

2 tablespoons butter, softened
-
1 teaspoon kosher salt
-
¼ teaspoon ground pepper

1 tablespoon finely chopped fresh chives
INSTRUCTIONS:

Place potatoes and cauliflower in a medium saucepan and cover with cold water. Bring to a boil over high heat. Reduce heat to medium and simmer until tender, about 18 minutes. Drain and return the vegetables to the pan. Cook over medium-high heat, stirring often, until dry, about 3 minutes.

Mash the vegetables with a potato masher. Add sour cream and butter and mash until mostly smooth. Stir in salt and pepper. Transfer to a large serving bowl and sprinkle with chives.
Makes 6 servings.
