Recipe: Almond Butter Chocolate Chip Cookies

Happy National Cookie Day! According to legend, today’s observance was inspired by Sesame Street’s Cookie Monster, who declared a national cookie day in 1976. Matt Nader of San Francisco’s Blue Chip Cookie Company made it official in 1987.

Cookies are among America’s most beloved treats, with the average American eating about 200 cookies per year. Celebrate today by trying a new holiday cookie recipe! These delicious, gluten-free almond butter chocolate chip cookies contain healthy fats, along with protein. They are sure to be a crowd-pleaser!

INGREDIENTS

  • 1 large egg

  • 1 cup almond butter

  • ½ cup lightly packed brown sugar

  • 1 teaspoon baking soda

  • ½ cup chocolate chips

  • ¼ cup chopped honey-roasted peanuts (optional)

INSTRUCTIONS:

  1. Position racks in upper and lower thirds of oven; preheat to 350 F. Line two baking sheets with parchment paper.

  2. Beat egg in a medium bowl with a hand mixer or in a stand mixer fitted with the paddle attachment. Add almond butter, brown sugar and baking soda; beat until smooth. Stir in chocolate chips and peanuts (if using).

  3. Using about 1 tablespoon to make each cookie, press the dough into a tight ball. Place on the prepared baking sheets, leaving 1 inch between cookies. Gently press down on each ball with the back of a spoon.

  4. Bake the cookies until cracked on top and golden on the edges, 8 to 10 minutes. Let cool on the pan for 10 minutes, then transfer to a wire rack to cool completely.

Store airtight at room temperature for up to five days.
